It is an important moment because it determines the quality of the final product, it is a priority to have an excellent raw material.
The harvesting of our olives takes place by hand picking and with the aid of facilitating machines as soon as the fruits begin to turn brown, a time in which they give us the maximum load of phenolic substances, essential to guarantee high quality
organoleptic and nutritional.

organoleptic and nutritional.

The transformation of the olives into oil, a fundamental and decisive phase, is carried out daily just a few hours after harvesting so that mold, oxidation and fermentation processes
degenerative, such as to nullify the work carried out in the field and to avoid the presence of unwanted flavors and odors, indicators of a “defective” oil. The system used is a modern continuous cycle crusher where all operations take place in automatic machines, made entirely of stainless steel.

subsequently it is filtered, assuming its limpid aspect of green color with golden yellow reflections.
